The author and composer are unknown.
Superficially, it is about celebrating the Eucharist, and refers to some traditional practices from the early church eg facing east while praying and celebrating Eucharist. However this phrases was perhaps originally a coded message about escaping from slavery. Therefore the meaning of the hymn to the people involved needs to be carefully considered.
There have been very few cases where alternative words are set to the tune.
